Mussels in Sarandë
The lagoon at Butrint, twenty minutes south, is one of the best mussel beds in the Mediterranean. That is where a lot of what we serve comes from.
How we cook them
Steamed open with white wine, garlic and parsley, served in the shell with bread for the juices — the version most tables order. There is also a tomato and chilli variation for guests who want more weight, and mussels folded into seafood linguine.
Mussels arrive live and are cleaned in the kitchen the same day. Any that do not open are discarded before the pan reaches you.
When to order them
Mussels are best in the cooler months and through spring, though the lagoon supplies most of the year. Ask the waiter for the day's condition — if they are not good, we say so rather than serve them.
A single pan works as a starter for two, or as a light lunch on its own with salad and bread.
