House pasta
Pasta in Sarandë
Pasta here is cooked to order and finished in the pan with the sauce — the Italian way, with Albanian seafood. Seafood linguine is the plate the kitchen sends out most.
The seafood plates
Linguine with the day's catch — prawns, mussels, clams and whatever the boats brought — is built on garlic, white wine and good olive oil rather than cream. Tagliatelle with prawns and cherry tomatoes is the lighter option, and squid-ink pasta appears when the squid is right.
Portions are full-size Albanian portions, not Italian primi. One plate plus a shared starter is a complete lunch.
Classics and alternatives
Beyond seafood there is carbonara made properly with egg and pepper, arrabbiata, and a slow ragù. Vegetarians get tomato and basil or grilled-vegetable pasta, and the kitchen can leave cheese out on request.
Wine-wise, an Albanian Shesh i Bardhë or an Italian white handles the seafood plates; the ragù prefers a Kallmet.
