Southern Albania

Traditional Albanian Food in Sarandë

If you have one meal to understand southern Albanian cooking, this is what to order and why each dish matters.

The dishes to try

Byrek — thin pastry layered with cheese or greens — is the everyday food of the country. Tavë is baked slowly in clay, rich and comforting. Village salad is tomato, cucumber, onion, olives and a slab of sheep's feta under local olive oil. Grilled lamb and veal come off the charcoal with nothing but salt.

Sweets are Ottoman-influenced: baklava with walnuts and syrup, sometimes revani. Raki closes the meal, poured small and drunk slowly.

Why the south tastes different

Sarandë sits between mountain and sea, so the table mixes both: lagoon mussels and Ionian fish alongside mountain lamb, sheep's cheese and wild greens. Greek and Italian influence is real here and shows up in the olive oil, the herbs and the pasta.

Everything we cook is what our own family eats. That is the simplest description of the menu.
